6 Medium sz. sweet potatos (or you can use regular potato’s)
2-3 cloves garlic, thinly sliced
2 Tbsp Olive Oil
30 Grams Butter (approx 2 1/2 Tbsp)
Freshly ground black pepper
Preheat the oven to 425 degrees. Place the potato on a chopping board, flat side down. Start at one end of the potato, slicing almost all the way through at about 2-3 mm intervals.
Arrange the potato’s in a baking tray and insert the sliced garlic in between the slits. Scatter some butter on top of each potato, drizzle with olive oil and sprinkle some sea salt and black pepper to taste.
Bake for about 40 minutes or until the potato skin is crispy and the flesh is soft. SO DELICIOUS!! Enjoy!
